Napa Wood Fired Pizzeria & Bistro founder and owner David Enos discussed expansion, local sourcing of ingredients and menu alternatives for food allergy sufferers Friday on News 8 at Noon.
Enos, who grew up locally and has spent three decades in the local food industry, developed his wood fired pizza vision during trips off the mainland and brought the concept to Rochester. He is preparing to open his third location locally in Webster.
Enos sources local ingredients for his menu items and he has carefully developed extensive gluten-free offerings. “Every year I bring in an independent company to interview our customers and make sure we’re doing the right thing,” said Enos. “A couple of years ago I picked up on that people were looking for health-conscious choices and for us to respond to allergies.” Enos worked with his chef to develop gluten-free dough that would taste just as good as his other pizza offerings. “It’s growing every year, the amount of people that are looking for that,” he said. “We’ve heard from our customers that we have the largest gluten-free menu in the whole region.”
