Cookbook helps families eat healthy on a budget

Healthy eating doesn’t have to be expensive — that’s the message behind a new cookbook.

Author Leanne Brown says she was struck by how many people in the U.S. are considered “food insecure.” 

The recipes in the book can be made with a budget of $4 a day. Brown says cooking at home does not need to be complicated.

“Making a grilled cheese sandwich is cooking, you can start there,” said Brown. “You can add tomato. An omelet is cooking. Just assembling a salad is cooking. We don’t have to be so precious about these things.”

The book, called “Good and Cheap”, is available online. Brown has partnered with local YMCA’s to give it out to clients in need.
