Workers at Casa Larga in Fairport were in the vineyards early Friday morning for the annual Ice Wine Harvest.
The grapes are left on the vine, waiting until the temperature drops and they’re frozen solid. The grapes are pressed while they are still cold. The wine they produce is sweeter than your typical batch and a regional specialty.
To celebrate, Casa Larga is hosting its annual Ice Wine Festival on February 16.
Andrea Colaruotolo-O’Neal, of the winery, tells News 8, “The nice part about ice wine fest it also includes a culinary piece. There is a variety of foods that use ice wine in the recipe.”
